Garlic White Lasagna
This is definitely a family favorite and always a hit with dinner guests. The prep time is a bit lengthy, but it can be made the day before and it can also be prepared and then frozen prior to cooking for later use. It freezes very well! If you like really hot spicy dishes then use all Hot Italian Sausage instead of a mixture of hot & mild.

| 4 | cloves garlic chopped |
| 1 | medium onion chopped |
| 12 Ounce(s) | jar roasted red peppers drained & chopped |
| 1/2 Cup(s) | white wine |
| 3 Cup(s) | fresh steamed spinach |
| 3 Cup(s) | Ricotta Cheese |
| 1/2 Teaspoon(s) | salt |
| 1/2 Teaspoon(s) | pepper |
| 1 | egg lightly beaten |
| 2 | to 3 jars (usually comes in 16oz jars) of Creamy Alfredo Sauce |

Instructions
- Brown sausage in large skillet over medium heat, using a wooden spoon to crumble sausage as it cooks. Drain sausage, reserving 1 Tbls drippings in skillet. Cook garlic & onion in reserved drippings over medium heat until onion is tender. Stir in sausage, chopped red pepper & wine. Bring to a boil; reduce heat & simmer, uncovered, 5 minutes or until most of the liquid has evaporated. Steam spinach; drain & squeeze between paper towels to remove excess liquid. Combine spinach, Riccotta Cheese, salt, pepper & egg; Stir well. Spread approximately 1&1/2 - 2 cups Alfredo sauce into a greased (I use a small amount of Olive Oil) 13"X9" baking dish. ( I have a 13"X9" baking dish that is deeper than the normal 2&1/2 inch baking dish. I prefer the deeper sides if you have one available.) Top with noodles then layer some of the spinach mixture (you spoon it on in small clumps) -cooked sausage- & grated mozzarella cheese. Then repeat layers beginning with the Alfredo Sauce etc... (I like a 3 layer Lasagna if the baking dish is deep enough to allow for that-if not 2 layers are fine.) Sprinkle last layer with the Parmesan Cheese.
(If desired, cover & chill overnight.) Let stand at room temperature 30 minutes before baking. Cover with tin foil -tented so cheese won't stick to foil- Bake at 350* for 45 minutes - 1 hour. Uncover for the last 15 minutes. You have to adjust cooking time to your oven. It will bubble around the edges when done. I usually check to make sure center is hot. This is a wonderfully flavorful dish. I serve it with warm french bread and a fresh garden salad. Guests always ask for the recipe. Enjoy!
