Jenn's pasta salad

This is a great and easy pasta salad, to be served cold as a side dish. However, you can add grilled chicken to it in order to make it a meal.

Ingredients

1 box of corkscrew pasta
1 Cup(s)sweet corn
1/4 Cup(s)diced cilantro
1/4 Cup(s)diced sweet red onion (optional)
1/2 Cup(s)diced olives
1 1/2 Cup(s)balsalmic vinegar
1/4 Cup(s)olive oil
salt/pepper to taste

Instructions

  1. Cook pasta fully, drain and rinse in cold water. Add corn, cilantro, onion, olives and toss. In a separate bowl mix olive oil and balsalmic vinegar. Add mixture to pasta and salt/pepper to taste. Best if refrigerated for 1 hour before serving.

I forgot to add... When I need a quick dinner I just cook up some chicken breasts on the George Forman and add it to the salad for a complete meal. We love it! I never have the patience to wait 1 hour and it is still really good! :)

I love this salad for summer! My husband and I are not real into onions and cilantro, so I don't put those in. Red Bell Pepper is my favorite and adds a great flavor to it.
